
Light, fresh, and full of flavour – these lettuce cups pair tender chicken with a creamy, collagen-infused tahini dressing.
Ingredients
- 500g chicken tenders
- 2 cloves garlic, minced
- 1 tbsp coconut aminos or tamari
- 1 tbsp olive oil
- 1 head cos lettuce, leaves separated
- 1 cucumber, diced
- 10 cherry tomatoes, diced
Tahini Collagen Dressing:
- 2 tbsp tahini
- Juice of ½ lemon
- 1 scoop The Collagen Elixir
- 2 tbsp water (to thin)
- Pinch of salt
Method

- Heat olive oil in a pan over medium heat. Add garlic and cook until fragrant.
- Add chicken and coconut aminos, cook until browned.
- Whisk together tahini, lemon juice, collagen, water, and salt until smooth.
- Fill lettuce cups with chicken, cucumber, and tomatoes. Drizzle with tahini collagen dressing.
