Collagen Chicken Lettuce Cups with Tahini Drizzle

Light, fresh, and full of flavour – these lettuce cups pair tender chicken with a creamy, collagen-infused tahini dressing.

Ingredients

  • 500g chicken tenders
  • 2 cloves garlic, minced
  • 1 tbsp coconut aminos or tamari
  • 1 tbsp olive oil
  • 1 head cos lettuce, leaves separated
  • 1 cucumber, diced
  • 10 cherry tomatoes, diced

 

Tahini Collagen Dressing:

  • 2 tbsp tahini
  • Juice of ½ lemon
  • 1 scoop The Collagen Elixir
  • 2 tbsp water (to thin)
  • Pinch of salt

 

Method 

    1. Heat olive oil in a pan over medium heat. Add garlic and cook until fragrant.
    2. Add chicken and coconut aminos, cook until browned.
    3. Whisk together tahini, lemon juice, collagen, water, and salt until smooth.
    4. Fill lettuce cups with chicken, cucumber, and tomatoes. Drizzle with tahini collagen dressing.
