Lemon & Ginger Quinoa Tabbouleh Cups

Ingredients: 

  • 1 cup cooked quinoa (cooled) 

  • ½ cup chopped parsley 

  • ¼ cup chopped mint leaves 

  • ½ cup diced cucumber 

  • ½ cup diced tomatoes 

  • 2 tbsp finely chopped red onion 

  • Juice 1 lemon 

  • 1 tbsp olive oil 

  • 1 tsp fresh ginger 

  • 1 tsp The Super Elixir - Lemon & Ginger 

  • Salt & Pepper to taste 


Instructions: 

  1. In a large bowl, combine quinoa, parsley, mint, cucumber, tomatoes, and red onion. 

  2. In a small bowl, whisk together lemon juice, olive oil, grated ginger, and The Super Elixir - ginger & lemon or unflavoured. 

  3. Pour dressing over the quinoa mixture and toss well to combine. 

  4. Season with salt and pepper. 

  5. Portion and serve chilled or at room temperature.
