
Ingredients:

1 cup cooked quinoa (cooled)

½ cup chopped parsley

¼ cup chopped mint leaves

½ cup diced cucumber

½ cup diced tomatoes

2 tbsp finely chopped red onion

Juice 1 lemon

1 tbsp olive oil
-
1 tsp fresh ginger
-
Salt & Pepper to taste
Instructions:

In a large bowl, combine quinoa, parsley, mint, cucumber, tomatoes, and red onion.

In a small bowl, whisk together lemon juice, olive oil, grated ginger, and The Super Elixir - ginger & lemon or unflavoured.

Pour dressing over the quinoa mixture and toss well to combine.

Season with salt and pepper.

Portion and serve chilled or at room temperature.
