White chocolate superfood bliss balls

Find your attention wandering and focus flagging in the afternoon? Boost your energy levels with something that tastes naughty but is actually oh so nice. The ingenious Marie aka @papaya_sunshine has a creative way of getting your daily dose of Alkalising Greens with these dairy, refined sugar and gluten free white chocolate superfood bliss balls. 

You'll need

  • 1 cup of cashews
  • 1/2 cup of coconut shreds
  • 1 1/4 cup of soft pitted medjool dates 
  • 2 tbs of SUPER ELIXIR Alkalising Greens 
  • 1 tbs of vanilla bean paste
  • 2 tbs of chia seeds
  • 1 tbs of cashew butter
  • 2 tbs of maple syrup (optional)

For the white chocolate 

  • 1 1/4 cups of cacao butter melted 
  • 1 tbs of vanilla bean paste 
  • 1/4 cup sifted coconut flour
  • 1/4 cup of honey or maple syrup 

To make 

  • First prepare your white chocolate by mixing all the ingredients together until well combined. Set aside. 
  • Then add your cashews and coconut shreds into a food processor and pulse until you have a meal type texture. Then add all the remaining ingredients and process until you have a sticky but together dough. Be careful not to blend too much.
  • Take out little balls of the mixture and roll them in the palms of your hand. Once you have rolled all the mixture into balls put into the fridge for around 30 mins.
  • By now the white chocolate should be a little thicker. Take your balls and roll them in the white chocolate until evenly covered.
  • Lay on a lined baking sheet to save mess. When finished put in the fridge for around 30 mins then repeat for a thicker covering.
  • Once refrigerated for a second time they are ready to enjoy.
